Restaurant should serve what it wants

As a waitress at a fine dining establishment in downtown State College, I am becoming more agitated every weekend when I see the "duck protesters" outside of Zola's. Clearly, this scares away prospective dinner guests, resulting in what surely becomes a slower night for the staff at Zola's. Foie Gras is a delicacy that not everyone can appreciate, but some enjoy. I appreciate the availability of restaurants that present diverse dishes. The protesters tend to exaggerate facts for their own purpose -- the inside of a duck's esophagus is calcified, making it less abrasive to use a feeding tube than people believe. Ducks also gorge naturally before migration, so while it may be uncomfortable, it falls short of torture. Foie gras is not found in most restaurants. Beef is ... chicken is ... why not protest for the killing of these animals? Chickens aren't treated humanely if bred for food, and I'm sure Zola's has more chicken dishes than foie gras. Perhaps chicken and cows aren't cute enough to protest for? Give the restaurants in town a break, as well as the students who spend their weekends waiting tables.
