California rolls, raw salmon to hit Panda's new location

Collegian Staff Writer

In less than two weeks, a new bar will be open for business on campus.

A sushi bar, that is.

Panda Express, the Chinese food restaurant located in the HUB-Robeson Center, is opening a new location to accommodate the student demand for sushi.

Beaumont Hung, Panda Express manager, said the new dining option was offered as a request from David Gingher, food services assistant director.

"According to Mr. Gingher, there has been a lot of people asking for it," he said.

Gingher said he often looks to those in charge of food services at universities across the country.

"We're always evaluating trends and new ideas that we think students will be interested in," he said.

"Sushi is popular at a lot of college campuses."

While the sushi bar has been developing for about six months now, the idea had been on Gingher's mind for a while.

"It's something I've been thinking about for a better part of a year," he said.

"I decided to work with Panda ... They do a great job."

Hung said there will be a variety of foods served at the restaurant, including different types of sushi, rolls and salads, as well as soup and drinks.

"We'll have tuna sushi, salmon sushi ... California rolls, veggie rolls and salads," he said.

"We'll also have boba drinks, which is tea with tapioca at the bottom and is something new here."

Four chefs from California will even be flown in to help train the employees, Gingher added.

"They will be here a week prior to opening and the first week it's open to help get it up and running," he said.

Wes Cronkite (junior-English) said he thought opening a sushi bar in the HUB was a good idea.

"I really don't like sushi, but I have a lot of friends that do," he said. "I think it's good for them and good for their business. There's another option now to eat at the HUB, so it's good from that perspective."

Vidhi Desai (junior-international politics and philosophy) said she would definitely eat at the new sushi bar.

"I like food that is different," she said.

However, some have expressed concern regarding the sushi bar's location, which is across from Chat's coffee shop on the HUB ground floor.

Because four tables and 16 chairs were removed to make room for the new eatery, students said finding HUB seating is an even bigger issue.

"I think it's a problem," Desai said. "I mean, I don't have a solution for it, but any way, the seating is not enough."

However, Gingher said students should not worry because the tables and seats will be relocated.

"We're moving them to other locations on the ground floor," he said. "There are areas we can tighten up ... but seating's always going to be an issue."

Gingher said the sushi bar will open either April 5 or 6.

Hung said the tentative weekday hours will be 11 a.m. to 8 p.m. If it is open on Saturdays, the hours will be 11 a.m. to 6 p.m.
